Ingredients

Scale
  • 34 lbs bone-in chicken pieces (thighs and drumsticks)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Vegetable oil (for frying)

Instructions

  1. Marinate the chicken: In a large bowl, mix buttermilk with salt and spices. Submerge chicken pieces completely and refrigerate for at least one hour or overnight.
  2. Prepare the dredging station: In another bowl, combine flour with additional spices. Set aside a plate for coating.
  3. Coat the chicken: Remove chicken from marinade, allowing excess liquid to drip off. Dredge each piece thoroughly in the flour mixture, shaking off any excess.
  4. Heat the oil: In a deep skillet or Dutch oven, heat oil over medium-high heat until it reaches around 350°F (175°C).
  5. Fry the chicken: Carefully add chicken pieces without overcrowding. Fry until golden brown and cooked through, about 12-15 minutes per side.
  6. Drain and serve: Once cooked (internal temperature at least 165°F), remove from oil and drain on paper towels.
