Description

  • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 1 cup vegetable oil (for frying)
  • Optional toppings: sour cream, salsa

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and minced garlic; cook for about 5 minutes until soft. Stir in cumin, chili powder, salt, and pepper.
  3. Remove from heat and mix in shredded cheese until melted.
  4. Lay out tortillas flat; spoon two tablespoons of filling onto each tortilla's center. Fold sides in and roll tightly from the bottom up.
  5. Heat oil in a heavy skillet over medium heat to about 350°F (175°C).
  6. Carefully place chimichangas seam-side down into hot oil; fry for about 3 minutes per side until golden brown. Drain on paper towels.
  7. Serve warm with sour cream and salsa.
