  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 cans (4 oz each) green chilies
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Juice of 1 lime

Instructions

  1. Gather all ingredients to ensure smooth cooking.
  2. In a large pot, heat oil over medium heat. Add diced onions and minced garlic; sauté until fragrant and translucent, about 5 minutes.
  3. Add the chicken breasts along with cumin and chili powder. Cook until the chicken is browned on the outside, about 6-7 minutes.
  4. Pour in the chicken broth and add the white beans. Simmer on low heat for about 20 minutes until the chicken is fully cooked.
  5. Remove the chicken from the pot; shred with two forks and return it to the chili.
  6. Stir in cream cheese until melted and combined.
