- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped (oil-packed)
- 4 cups fresh spinach
- 1/4 cup fresh basil leaves, chopped
- 12 oz pasta (fettuccine or penne)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot; cook pasta until al dente according to package instructions. Drain and set aside.
- In a skillet over medium heat, add olive oil and sear chicken breasts for 6-7 minutes on each side until golden brown. Remove from skillet and let rest before slicing.
- In the same skillet, sauté garlic and sun-dried tomatoes for about 2 minutes until fragrant. Stir in heavy cream and grated Parmesan until melted.
- Fold in spinach and basil; cook until spinach wilts, about 3 minutes.
- Add sliced chicken and drained pasta to the sauce; toss until well coated.
- Serve warm with additional Parmesan and basil as garnish.
