  • 1 lb shrimp, peeled and deveined
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 tbsp fresh lime juice
  • ¼ cup cilantro, chopped

Instructions

  1. Gather all ingredients, chopping bell peppers and mincing garlic and ginger.
  2. In a large skillet over medium heat, add a splash of oil until shimmering.
  3. Sauté garlic and ginger for about one minute until fragrant.
  4. Add bell peppers and cook for three minutes until slightly softened.
  5. Pour in coconut milk and curry powder; stir to combine.
  6. Add shrimp and cook for about five minutes until they turn pink and opaque.
  7. Squeeze lime juice over the dish and sprinkle with cilantro before serving.
