  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sear the chicken for about 4-5 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté the diced onion until soft (about 3 minutes).
  4. In a bowl, mix cream of mushroom soup with chicken broth, garlic powder, salt, and pepper until combined.
  5. Return the chicken to the baking dish, add uncooked rice, and pour the creamy mixture over it evenly.
  6. Cover with aluminum foil and bake for about 45 minutes or until rice is cooked through. Remove foil during the last 10 minutes for a bubbly top.
