  • 1 lb fresh cremini and button mushrooms, sliced
  • 1 medium onion, finely chopped

  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  2. Add mushrooms and cook until golden brown (5-7 minutes).
  3. Pour in vegetable broth and add thyme; simmer for 15 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream over low heat; season with salt and pepper as desired.
  6. Serve warm, garnished with fresh thyme or croutons if desired.
