  • 4 baking potatoes, peeled and diced
  • 1 cup heavy cream
  • 6 cups low-sodium chicken broth
  • 1 cup crispy bacon bits
  • 4 green onions, sliced
  • 1 cup grated sharp cheddar cheese
  • ½ cup sour cream
  • Salt and pepper to taste

Instructions

  1. Wash and peel the baking potatoes. Dice them into one-inch cubes.
  2. In a large pot over medium heat, melt 4 tablespoons of butter and sauté finely chopped onions until translucent.
