  • 1 cup cottage cheese
  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt (or to taste)
  • 1/2 tsp pepper (or to taste)
  • 1/2 cup panko breadcrumbs

Instructions

  1. Boil a large pot of salted water. Add elbow macaroni and cook until al dente according to package instructions. Drain and set aside.
  2. In a medium saucepan over medium heat, melt butter until bubbly. Whisk in flour for about one minute until it forms a paste.
  3. Gradually add milk while whisking continuously until smooth and thickened (about 3-5 minutes).
  4. Stir in cottage cheese and shredded cheddar, mixing until melted.
  5. Fold cooked macaroni into the cheese sauce until thoroughly coated. Season with salt and pepper.
  6. Preheat the oven to 350°F (175°C). Transfer mixture to a greased baking dish and top with panko breadcrumbs.
  7. Bake for 25-30 minutes or until golden brown and crispy.
