  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onions, slicing the carrots and celery, and mincing the garlic.
  2. In a large pot over medium heat, melt 1 tbsp butter or olive oil. Add onions and sauté until translucent (about 3 minutes). Stir in carrots and celery until softened.
  3. Add the chicken breasts and minced garlic. Season with salt, pepper, and thyme. Pour in enough chicken broth to cover everything by about an inch (approximately 4 cups). Bring to a gentle simmer.
  4. Cook the chicken for 15-20 minutes until done. Remove the chicken, shred it using two forks, then return it to the pot along with heavy cream.
  5. Let the soup simmer on low heat for an additional 5 minutes until slightly thickened. Adjust seasoning as needed.
  6. Serve hot, garnished with fresh parsley if desired.
