- 16 oz fresh gnocchi
- 1 cup diced carrots
- 1 cup finely chopped celery
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 tsp dried Italian herbs (oregano and basil)
- 2 cups fresh spinach or kale
Instructions
- 1. Sauté the Veggies: Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook until softened (about 5 minutes).
- 2. Add Garlic & Chicken: Stir in minced garlic for 30 seconds until fragrant. Add chicken breasts and coat with veggies.
- 3. Pour in Broth: Add chicken broth and dried herbs; bring to a gentle boil then simmer for about 20 minutes until chicken is cooked through.
- 4. Add Gnocchi & Cream: Remove and shred chicken, return to pot along with gnocchi. Stir in cream and simmer for another 5-7 minutes until gnocchi are tender.
