  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until golden brown (5-7 minutes).
  2. Stir in minced garlic, carrots, and celery; cook until vegetables soften (3-4 minutes).
  3. Pour in chicken broth and scrape the bottom of the pot to release flavors. Add heavy cream and bring to a simmer.
  4. Add gnocchi and spinach; cook until gnocchi floats to the surface (2-3 minutes).
  5. Season with thyme, salt, and pepper; let simmer for another minute before serving.
