  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Drain and reserve some pasta water.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Season chicken with salt and pepper; cook for 6-7 minutes per side until golden. Remove from skillet and slice.
  3. In the same skillet, melt an additional tablespoon of butter and sauté garlic until fragrant (about 1 minute). Stir in heavy cream.
  4. Add Parmesan cheese, stirring until melted and smooth; use reserved pasta water to adjust consistency as needed.
  5. Toss sliced chicken and cooked fettuccine into the sauce, mixing well.
  6. Serve topped with extra Parmesan and cracked black pepper if desired.
