  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Cook fettuccine in salted boiling water until al dente; reserve some pasta water, then drain.
  2. In a skillet, melt 2 tbsp of butter over medium heat. Season chicken with salt and pepper, cooking for about 6 minutes per side until golden and cooked through (165°F). Let rest before slicing.
  3. In the same skillet, add remaining butter and garlic; sauté until fragrant. Pour in heavy cream and gently simmer.
  4. Stir in Parmesan cheese until melted. If too thick, add reserved pasta water to achieve desired consistency.
  5. Combine sliced chicken and cooked fettuccine with the sauce; toss gently.
  6. Serve with extra Parmesan if desired.
