  • 1 head cauliflower, chopped
  • 1 bulb roasted garlic
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup sharp cheddar cheese, shredded
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet.
  2. Wrap whole garlic bulbs in foil with olive oil and place alongside the cauliflower. Roast for 30-35 minutes until tender.
  3. Transfer roasted cauliflower to a pot, add vegetable broth to cover by an inch, and bring to simmer over medium heat.
  4. After about 10 minutes of simmering, squeeze roasted garlic cloves into the pot. Stir in heavy cream and cheddar cheese until melted and smooth.
  5. Blend mixture until creamy using an immersion blender or regular blender.
