- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 8 oz fettuccine or penne pasta
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium sweet onion, sliced
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Wash and slice the vegetables while boiling salted water for pasta.
- Cook pasta until al dente (about 8-10 minutes), then drain.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and sauté until golden brown (6-7 minutes per side). Remove and set aside.
- In the same skillet, add onions and bell peppers; sauté until softened (about 5 minutes).
- Pour in heavy cream and stir; let simmer for 3-5 minutes until thickened. Add additional Cajun seasoning if desired.
- Slice cooked chicken and return it to the skillet along with drained pasta; mix well to coat in sauce.
- Top with grated Parmesan before serving hot.
