  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by peeling and dicing the butternut squash into small cubes. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
