  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 large egg
  • ¾ cup panko breadcrumbs
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix ground chicken, ricotta, spinach, Parmesan, garlic powder, egg, panko breadcrumbs, salt, and pepper until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place them in the prepared baking dish.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. Meanwhile, melt butter in a saucepan over medium heat. Stir in heavy cream and simmer before adding grated Parmesan until melted.
  6. Once the meatballs are done baking, add them to the sauce and gently stir to coat.
