  • 2 cans (15 oz each) great northern or cannellini beans, rinsed and drained
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until vegetables soften.
  2. Stir in garlic and thyme; cook for another minute until fragrant.
  3. Add the rinsed beans and vegetable broth, bringing to a gentle simmer while stirring.
  4. Season with salt and pepper to taste; continue simmering for 20-25 minutes.
  5. Just before serving, mix in fresh lemon juice for added brightness.
