- 2 tsp coriander powder
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Prepare your vegetables by dicing the onion, chopping the celery, and shredding the carrots.
- In a large pot over medium heat, heat 2 tbsp olive oil until shimmering. Sauté the onion until translucent (about 5 minutes).
- Add minced garlic along with cumin and coriander; cook until fragrant (about 1 minute).
- Stir in rinsed red lentils and pour in vegetable broth or water. Bring to a boil, then reduce heat to simmer.
- Add the chopped carrots and celery; cook for 20-25 minutes until tender.
- Season with salt and pepper. For a creamy texture, blend half of the soup using an immersion blender.
- Just before serving, stir in fresh lemon juice for brightness.
