  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup wild rice blend
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 4 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Sauté onions, carrots, and celery in butter over medium heat for about 5 minutes until softened.
  2. Add minced garlic and cook for another minute before adding the chicken breasts. Season with salt and pepper, searing until lightly browned on both sides.
  3. Pour in the chicken broth and bring to a boil. Stir in the wild rice blend and reduce heat to simmer for 30-40 minutes until the rice is tender.
  4. Remove chicken from pot, shred with forks, and return to soup. Stir in cream or milk until combined.
  5. Add thyme and parsley; adjust seasoning as needed. Simmer for an additional 10 minutes before serving.
