- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 1 cup wild rice blend
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 6 cups low-sodium chicken broth
- 1 cup heavy cream or milk
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 4 garlic cloves, minced
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- Sauté onions, carrots, and celery in butter over medium heat for about 5 minutes until softened.
- Add minced garlic and cook for another minute before adding the chicken breasts. Season with salt and pepper, searing until lightly browned on both sides.
- Pour in the chicken broth and bring to a boil. Stir in the wild rice blend and reduce heat to simmer for 30-40 minutes until the rice is tender.
