Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup shredded chicken or cubed tofu
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • Juice of 1 lime
  • Chopped green onions for garnish

Instructions

  1. Prep your ingredients by chopping vegetables and shredding chicken if using.
  2. In a large pot over medium heat, sauté minced garlic and ginger in a splash of oil until fragrant (about 1 minute).
  3. Add chicken broth and bring to a gentle boil. Stir in egg noodles and cook according to package instructions (about 5-7 minutes).
