  • 2 cans (14.5 oz each) diced tomatoes
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • Juice of ½ lemon (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion for about 5 minutes until translucent.
  2. Add diced carrots and celery; cook until slightly softened.
  3. Stir in minced garlic, cumin, and thyme; sauté for another minute.
  4. Incorporate lentils and canned tomatoes (with juice), mixing well.
  5. Pour in vegetable broth; bring to a gentle boil then reduce heat to low.
  6. Cover partially and let simmer for 30-35 minutes until lentils are tender but not mushy.
  7. Taste and adjust seasoning as needed; add lemon juice before serving if desired.
