- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 2 bell peppers (any color), diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 cup tortilla chips
- 2 ripe avocados, sliced
- Juice of 2 limes
- 2 tsp ground cumin
- 1 tsp chili powder
Instructions
- In a large pot over medium heat, add oil and sauté onions until translucent. Stir in minced garlic for about 1 minute.
- Add chicken breasts and sear slightly before pouring in the chicken broth, diced tomatoes, bell peppers, cumin, and chili powder. Stir well.
- Bring to a boil then reduce heat to low. Cover and simmer for about 25 minutes until chicken is fully cooked.
