Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 bell peppers (any color), diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup tortilla chips
  • 2 ripe avocados, sliced
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 1 tsp chili powder

Instructions

  1. In a large pot over medium heat, add oil and sauté onions until translucent. Stir in minced garlic for about 1 minute.
  2. Add chicken breasts and sear slightly before pouring in the chicken broth, diced tomatoes, bell peppers, cumin, and chili powder. Stir well.
  3. Bring to a boil then reduce heat to low. Cover and simmer for about 25 minutes until chicken is fully cooked.
  4. Remove chicken from pot; shred it using two forks and return it to the pot along with lime juice.
  5. Serve hot topped with tortilla chips and avocado slices.
