  • 1 cup sharp cheddar cheese, grated
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or substitute with milk)
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Sauté chopped onions and minced garlic until translucent, about 5 minutes.
  2. Add broccoli florets to the pot and cook for another 3 minutes.
  3. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for about 10 minutes until broccoli is tender.
  4. Using an immersion blender, blend the soup until smooth. If using a traditional blender, allow it to cool slightly before blending in batches.
  5. Return the blended soup to low heat and stir in heavy cream and grated cheddar cheese until melted and creamy.
