  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • 3 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  2. Stir in chopped bell pepper and cook for another 3-4 minutes.
  3. Add black beans, kidney beans, diced tomatoes (with juice), vegetable broth, cumin powder, and chili powder. Bring to a gentle boil.
  4. Reduce heat to low and simmer uncovered for about 30 minutes to meld flavors.
  5. Taste and adjust seasoning as desired before serving hot.
