  • 1 bay leaf

Instructions

  2. Add rinsed lentils, thyme, and bay leaf; mix well to combine.
  3. Pour in vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook for 30–35 minutes until lentils are tender.
  4. Remove bay leaf; season with salt and pepper to taste. For a creamier texture, blend part of the soup if desired.
