  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  2. Place the chicken breasts at the bottom of the crockpot and layer with carrots, celery, onion, garlic, thyme, salt, and pepper.
  3. Pour in enough chicken broth to cover the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with tongs or forks and return it to the pot along with lemon juice.
  6. Serve hot in bowls with crusty bread or crackers.
