- 3–4 boneless, skinless chicken breasts (1 lb)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 bell peppers (red and green), diced
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup tortilla chips, crushed for topping
- 1/4 cup fresh cilantro, chopped (optional)
- Juice of 1 lime
- 2 tsp cumin
- 2 tsp chili powder
Instructions
- Chop onion, bell peppers, and garlic cloves.
- In a large pot over medium heat, sauté onions in olive oil until translucent. Add bell peppers and cook until softened.
- Add the chicken breasts to the pot and pour in chicken broth to cover the meat. Bring to a simmer.
- Stir in diced tomatoes, cumin, and chili powder; cook for about 20 minutes until chicken is cooked through.
- Remove chicken from the pot and shred it before returning it to the soup along with heavy cream. Stir until well combined.
