  • 34 boneless, skinless chicken breasts (1 lb)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers (red and green), diced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup tortilla chips, crushed for topping
  • 1/4 cup fresh cilantro, chopped (optional)
  • Juice of 1 lime
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Chop onion, bell peppers, and garlic cloves.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent. Add bell peppers and cook until softened.
  3. Add the chicken breasts to the pot and pour in chicken broth to cover the meat. Bring to a simmer.
  4. Stir in diced tomatoes, cumin, and chili powder; cook for about 20 minutes until chicken is cooked through.
  5. Remove chicken from the pot and shred it before returning it to the soup along with heavy cream. Stir until well combined.
  6. Serve hot topped with tortilla chips, fresh cilantro, and a squeeze of lime juice.
