Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 6 oz egg noodles
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop all veggies into bite-sized pieces.
  2. In a large pot over medium heat, add a splash of oil and cook the chicken for about 5-7 minutes on each side until golden brown. Set aside.
  3. In the same pot, sauté onions and garlic for about 5 minutes until fragrant.
  4. Add carrots and celery; cook for an additional 3 minutes.
  5. Pour in the chicken broth along with thyme, salt, and pepper; bring to a boil.
  6. Return cooked chicken to the pot and add noodles; simmer for about 8-10 minutes until noodles are tender.
  7. Adjust seasoning before serving.
