  • 1 medium onion, finely chopped
  • 1 cup bell peppers, chopped (mix of colors)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups grated sharp cheddar cheese
  • 2 cups cooked pasta or rice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 1/2 tsp paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat oil and sauté the chopped onion and bell peppers until softened.
  3. Add the ground beef, cooking until browned (about 5–7 minutes).
  4. Stir in minced garlic, diced tomatoes, salt, pepper, oregano, and paprika; let simmer for about 10 minutes.
  5. In a large bowl, combine the meat mixture with cooked pasta or rice.
  6. Transfer half of the mixture into a greased baking dish and sprinkle half of the cheese on top. Layer with remaining mixture and cheese.
  7. Bake for 25–30 minutes or until bubbly and golden brown.
