Description

Coffee & Chocolate Muffins are a delightful morning treat that combines the rich flavors of coffee and chocolate into a soft, fluffy muffin. Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 cup milk (whole preferred)
  • ½ cup brewed coffee (cooled)
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, granulated sugar, and brown sugar until well combined.
  3. In another bowl, mix eggs, milk, and cooled coffee until smooth. Optionally add a splash of vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the chocolate chips.
  5. Spoon the batter into the muffin tin, filling each cup two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Allow cooling slightly before enjoying.
