Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
- In a bowl, whisk together flour, cocoa powder, baking powder, granulated sugar, and brown sugar until well combined.
- In another bowl, mix eggs, milk, and cooled coffee until smooth. Optionally add a splash of vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the chocolate chips.
- Spoon the batter into the muffin tin, filling each cup two-thirds full.
- Bake for 20-25 minutes or until a toothpick comes out clean. Allow cooling slightly before enjoying.
