  • 8 oz fresh mozzarella cheese, shredded
  • ¼ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Season chicken breasts with salt and pepper; add them to the skillet. Sear each side for about 5 minutes until golden brown.
  4. Pour crushed tomatoes over the chicken and sprinkle with dried herbs. Simmer for 10 minutes.
  5. Transfer the mixture to the greased baking dish. Top generously with mozzarella and parmesan cheese.
