Ingredients

  • 1 lb rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (mixed colors), diced
  • ½ cup red onion, finely chopped
  • ½ cup olives (black or green), pitted and sliced
  • 1 cup feta cheese, crumbled
  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in salted boiling water for about 8 minutes until al dente. Drain and let cool.
  2. Chop cherry tomatoes, cucumber, bell peppers, red onion, and olives into bite-sized pieces.
  3. In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until smooth.
  4. In a large mixing bowl, combine cooled pasta and chopped vegetables. Pour dressing over the mixture and toss gently.
  5. Sprinkle crumbled feta cheese on top and fold it in carefully.
  6. Refrigerate for at least one hour before serving to allow flavors to meld.
