  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz fettuccine or spaghetti
  • 23 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated fresh Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • Salt to taste
  • 2 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cooking for about 6-7 minutes on each side until golden brown. Remove from heat and let it rest.
  3. In the same skillet, add minced garlic and sauté for about one minute until fragrant.
  4. Lower the heat, pour in heavy cream while scraping any browned bits from the pan. Stir in Parmesan cheese until melted. If too thick, add reserved pasta water until desired consistency is reached.
  5. Slice chicken into strips and return it to the skillet along with drained pasta. Toss everything together gently until well-coated in sauce.
  6. Plate your Chicken Carbonara and garnish with extra Parmesan and cracked black pepper.
