  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain full-fat yogurt
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp garam masala
  • 14 oz canned crushed tomatoes
  • 1 cup full-fat coconut milk
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the chicken by mixing yogurt, ginger, garlic, cumin, coriander, and garam masala in a bowl. Add diced chicken and marinate for at least 30 minutes or overnight.
  2. Heat oil in a large skillet over medium heat. Sauté chopped onions until golden brown.
  3. Stir in canned tomatoes and simmer for about 10 minutes until thickened.
  4. Add coconut milk and marinated chicken. Simmer uncovered for 15-20 minutes until cooked through.
  5. Adjust seasoning with salt or sugar if desired. Serve hot over rice or naan, garnished with cilantro.
