Ingredients
- 3–4 lbs chuck roast
- 4 dried guajillo peppers
- 1 tbsp cumin seeds
- Fresh cilantro (for garnish)
- 4 cups low-sodium beef broth
Instructions
- Trim excess fat from the chuck roast and cut it into large chunks. Season generously with salt and pepper.
- Soak dried guajillo peppers in hot water for 15-20 minutes until softened; set aside.
- Blend soaked peppers, cumin seeds, garlic cloves, onion quarters, and beef broth until smooth to create the sauce.
- In a large pot over medium heat, sear the seasoned meat until browned on all sides. Pour the blended sauce over the meat and bring to a simmer.
