Ingredients

Scale
  • 34 lbs chuck roast
  • 4 dried guajillo peppers
  • 1 tbsp cumin seeds
  • Fresh cilantro (for garnish)
  • 4 cups low-sodium beef broth

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks. Season generously with salt and pepper.
  2. Soak dried guajillo peppers in hot water for 15-20 minutes until softened; set aside.
  3. Blend soaked peppers, cumin seeds, garlic cloves, onion quarters, and beef broth until smooth to create the sauce.
  4. In a large pot over medium heat, sear the seasoned meat until browned on all sides. Pour the blended sauce over the meat and bring to a simmer.
  5. Cover and reduce heat to low, cooking for about three hours or until fork-tender. Shred the meat with two forks.
  6. Warm corn tortillas on a skillet, fill each with shredded meat, and garnish with chopped cilantro and diced onions. Serve with the consomé for dipping.
