  • 1 medium spaghetti squash (about 34 lbs)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • Salt and pepper to taste
  • 1 cup marinara sauce (or sauce of choice)
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. 3. Drizzle olive oil over the cut sides and sprinkle with salt and pepper.
  4. 4. Place the squash halves cut-side down on a lined baking sheet and roast for 30-40 minutes until tender.
