  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour (for crust)
  • 1/2 cup unsalted butter (cold)
  • 68 tbsp ice water

Instructions

  1. Prepare the Crust: In a bowl, mix 1 1/2 cups flour, 3/4 cup sugar, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough holds together. Chill for at least 30 minutes.
  2. Make the Filling: In a separate bowl, combine huckleberries, 3/4 cup sugar, lemon juice, and 1/4 cup flour. Toss gently to coat.
  3. Assemble the Pie: Roll out half of the chilled dough and fit into a pie pan. Fill with the huckleberry mixture. Roll out remaining dough for the top crust, cut slits for steam venting, and place it over the filling.
  4. Bake: Preheat oven to 375°F (190°C). Bake for 45–50 minutes until golden brown.
