  • 6 hatch chilies
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded Monterey Jack cheese
  • 1 lb ground beef (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Rinse and dry hatch chilies, then place them on a baking sheet lined with parchment paper.
  2. Roast chilies for 20-25 minutes until slightly charred, turning halfway through.
  3. In a skillet over medium heat, warm olive oil and sauté onions for 5-7 minutes until translucent. Add minced garlic and cook for another minute.
  4. If using ground beef, add it now and cook until browned. Stir in roasted chilies, season with salt and pepper, and cook for an additional 3-4 minutes.
