  • 4 Hatch green chiles, roasted and chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef or turkey
  • 8 corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups low-sodium chicken broth
  • 1 teaspoon cumin powder
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Roast the hatch green chiles under a broiler or over an open flame until charred. Peel off the skins and chop finely.
  2. In a large pot over medium heat, add oil and sauté diced onions until translucent. Add minced garlic and cook until golden.
  3. Stir in ground beef or turkey, browning it thoroughly. Season with cumin, salt, and pepper.
  4. Add the chopped hatch green chiles and chicken broth to the pot. Simmer gently for about 20 minutes.
  5. Preheat your oven to 375°F (190°C). Fill each corn tortilla with the meat mixture, sprinkle cheese on top, roll tightly, and place seam-side down in a baking dish.
  6. Pour additional broth over the enchiladas and top with remaining cheese. Bake for 25-30 minutes until bubbly and golden.
