  • 4 cloves fresh garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 2 tsp fresh rosemary or thyme, chopped
  • 2 cups mixed vegetables (bell peppers, zucchini), sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper and place them in the baking dish.
  3. In a bowl, whisk together olive oil, soy sauce, honey, minced garlic, and fresh herbs.
  4. Pour the marinade over the chicken, ensuring it’s well coated.
  5. Arrange sliced vegetables around the chicken in the baking dish.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes for a crispy finish.
