Description

This easy cheesy casserole is the ultimate weeknight comfort food.   • 2 cups uncooked pasta (penne or rotini)
  • 1 lb ground turkey or beef
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers or spinach
  • 1 can (14.5 oz) diced tomatoes with Italian herbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup seasoned breadcrumbs
  • ½ cup freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta in salted boiling water until al dente; drain and set aside.
  3. In a skillet over medium heat, brown the ground meat until fully cooked.
  4. Stir in vegetables and diced tomatoes; simmer for a few minutes.
  5. Combine cooked pasta with meat mixture in a large bowl; mix in mozzarella and cheddar cheeses.
  6. Pour into a greased casserole dish, top with breadcrumbs mixed with parmesan cheese.
  7. Bake for 25-30 minutes until golden brown.
