  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked pasta or rice (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté until softened.
  2. Increase heat slightly and add ground beef. Cook until browned, breaking clumps apart.
  3. Stir in minced garlic, paprika, cumin, salt, and pepper; cook until fragrant.
  4. Pour in canned tomatoes along with juices and simmer for 10 minutes.
  5. If using pasta or rice, stir it into the mixture before transferring to a baking dish. Top with shredded cheeses.
  6. Preheat oven to 350°F (175°C) and bake uncovered for 20-25 minutes or until cheese is bubbly and golden brown.
