  • 1 cup bell peppers (mixed colors), chopped

  • 1 tsp cumin

  • 1 tbsp olive oil (or avocado oil)
  • 2 tbsp fresh parsley or cilantro, chopped

  4. Stir in the chopped bell peppers, paprika, cumin, salt, and pepper. Continue cooking until the peppers soften slightly (about 5 minutes).
