  • 2 medium sweet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup water

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion and bell pepper until softened, about 5 minutes. Add minced garlic and cook until fragrant.
  2. Increase heat slightly and add ground beef to the skillet. Cook until browned, breaking it apart with a spatula (7-10 minutes).
  3. Stir in diced sweet potatoes, cumin, chili powder, salt, and pepper. Mix well.
  4. Pour in water, cover the skillet with a lid, and let simmer for about 15 minutes until sweet potatoes are tender.
  5. Serve warm, garnished with fresh cilantro or avocado if desired.
