  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mix of colors)
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup shredded cheese (optional)

Instructions

  1. Heat a large skillet over medium heat and add a splash of olive oil. Sauté onion and garlic until translucent.
  2. Increase heat slightly and add ground beef. Cook until browned, breaking it apart as it cooks.
  3. Stir in the diced bell peppers and cook until slightly softened.
