  • 1 cup pumpkin puree (fresh or canned)
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ cup chopped walnuts or pecans (optional)
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • **Topping**:
  • ¼ cup brown sugar
  • 2 tbsp melted butter
  • ¼ cup rolled oats (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugars, cinnamon, nutmeg, and nuts until combined.
  3. In another bowl, mix the pumpkin puree and eggs until smooth. Gradually add to the dry ingredients and stir until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. For the topping, mix brown sugar with melted butter (and oats if using) and sprinkle over the batter.
  6. Bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
