Ingredients

  • 1.5 lbs boneless chicken thighs
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 2 bay leaves

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until softened (3-4 minutes).
  2. Chop carrots and potatoes while aromatics cook. Season chicken thighs with salt, pepper, thyme, and rosemary.
  3. Layer seasoned chicken in the crockpot followed by carrots, potatoes, sautéed onions, and garlic. Pour chicken broth over all ingredients.
  4. Add bay leaves to the mixture for extra flavor.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until everything is tender.
  6. Remove bay leaves before serving and enjoy!
